After brining this cheese is rolled in grapevine ash to encourage the growth of its velvety rind, a traditional practice from the great cheese-making regions of France. The naturally occurring microflora grows through the fine ash layer to create a visually stunning cheese that will be a standout on any cheeseboard.
Young but good from 3-4 weeks. Perfect at 4-7 weeks. Sublime at 8+ weeks.
